How to Make Egusi Soup

Each country has its own national cuisine. Every region and every nation is always ready to amaze tourists with unusual and exquisite delicacies. While these dishes are specialties only to visitors, for locals, they are a daily diet.

Soup egusi is one of such delicacies for tourists. Egusi soup is made from egusi seeds. Egusi seeds are seeds of special cucurbitaceous plants (pumpkin, melon, squash, etc.). The seeds are rich in fat and protein. The use of the seeds is broad.

Egusi soup is a thick soup with the ground seeds of egusi. The soup is popular in West Africa, especially in Nigeria. There are many variations of the soup across the region. In addition to seeds, water, and oil, egusi soup also contains leaf vegetables, meat, and seasonings. Leaf vegetables for egusi soup include celosia, bitterleaf, and spinach. Among other vegetables there can also be tomatoes and okra. Seasonings include onions, chili peppers, and locust beans. As for meats, you can add goat, beef, fish, crayfish, or shrimp.

If you have been to Africa and you tried this soup, you almost definitely will want to have it again. It is possible to cook the soup outside of Africa as most of the ingredients are available at the market. There are many variations of the recipe; below you will find just one of them.

So, if you are going to make an egusi soup at home, these are the ingredients you will need:

  • ¾ cup of pumpkin seeds;
  • 18 ounces of tomato sauce;
  • 1 ½ pounds of cubed beef stew meat;
  • 3 tablespoons of tomato paste;
  • ½ cup peanut oil;
  • 1 ½ cup water;
  • 2 large chopped tomatoes;
  • 2 pounds fresh shrimp, peeled and deveined;
  • 1 small chopped onion;
  • 1 pound fresh chopped spinach;
  • 2 habanero peppers, minced and seeded.

Put pumpkin seeds in a blender and blend them for 40 seconds until a powdery mixture is formed.

Wash and cut the beef into small cubes. Season it with salt. Heat oil over medium-high in a large pot for 5 minutes. Add beef and sauté for 5 minutes, until brown.

Put onions, tomatoes, and pepper in a blender and blend for 30 seconds until all smooth. Add the mixture to meat, lower the heat to medium-low, and cover. Cook for 40 to 50 minutes until meat is tender.

Add tomato sauce, water, and shrimp, and simmer for about 10 minutes.

In the end add spinach and ground pumpkin seeds and keep on simmering for 10 minutes or more.

In Nigeria, egusi soup is very popular among the Igbo people of southeastern Nigeria,as well as among the Ibibio people and the Efik people of Southern Nigeria, Edo people, the Hausa of northern Nigeria and the Yoruba people, Esan people, and Etsako people of the southwest of Nigeria.
